500 grams of onions Borettane
1 Treviso radicchio
2 tablespoons of white wine vinegar
100 ml of water
1 tablespoon of sugar
1 tablespoon extra virgin olive oil
Peel the onions, wipe and rinse thoroughly.
Wash the chicory, removing hard outer leaves and tough, cut in half lengthwise, then cut into slices.
In a glass to a mixture of vinegar, water and sugar, according to the dosage.
In a pan pour oil and put the onions. Turn on the heat and sauté for a couple of minutes on high heat.
Add the vinegar mixture, add a pinch of salt and cook over low heat for 30 minutes stirring occasionally. The exact cooking time depends on the size of onions, which should be soft but not falling apart.
After cooking up the flame, add the radicchio and simmer it gently for 5 minutes.
Adjust salt and serve.
